Foodie Friday focuses on pie

VANCOUVER (NEWS1130) – This edition of Foodie Friday is touching down on the humble pie.
“Cupcakes were probably hot over two years ago now and I now see the revival of the pie,” says Mijune Pak of Follow Me Foodie. “It’s something that’s kind of always been there but it’s a little bit forgotten.”
Pak says a unique pie is the lemon buttermilk pie from Savary Island in West Vancouver. “It’s kind of almost like a light cheesecake meets a baked lemon custard or a flan.”
And don’t let the name scare you: the raw vegan coconut pie from OrganicLives is amazing. Pak compares it to an unbaked cheese cake.
“It’s not like a dessert for birds or anything. It’s almost like a coconut cream pie but it’s unbaked and the crust is made out of nuts so it’s almost like a granola crust.”
And pies are easy things to make in your own kitchen with almost limitless possibilities for sweet or savoury dishes.
Pak will be tasting lots of pies this Sunday when she guest-judges the Great BC Bake-Off in Langley.
